Pesto at the Dibbinsdale Inn is expanding its senior team to support sustained business growth.
The news sees Cat Mealor, previously Deputy Manager of the Dibbinsdale Inn, promoted to the role of General Manager and former General Manager of Pesto Widnes and Duty Manager for Pesto Dicconson Arms, Melanie Mooney joining the team as Duty Manager.
Richard Tomlinson, previously Bar Manager at Chiquito’s, joins the team as Trainee Assistant Manager with Georgina Wilkinson also moving into the role of Trainee Assistant Manager, having joined Pesto at the Dibbinsdale Inn as a waitress in 2012.
The newly appointed senior management team will play a key role in the daily running of the Italian restaurant and AA 4-star hotel, driving continued growth year-on-year.
Speaking on the senior restructure, Co-owner of Pesto Sara Edwards said: “With the continued demand from customers to stay and dine at the Dibbinsdale Inn, expanding our senior team will ensure customers are provided with the excellent standards of service they have come to expect.

Pesto at the Dibbinsdale Inn is the independent Italian restaurant group’s first hotel. Located on Dibbinsdale Road, Bromborough, the hotel boasts 12 rooms and prides itself on adding those extra touches associated with a larger hotel. Breakfast is included within the rate.
Renowned for Italian small plates or ‘piatinni’, Pesto boasts over 40 dishes full of big flavours. Giving a true taste of little Italy, dishes include Pizzetta picante con salsiccia with spicy Italian sausage and Penne all’arrabiata which can be made with gluten free spaghetti or penne pasta.
The restaurant serves up a classic breakfast daily between 10am to 11.30am. Residents of the hotel can enjoy breakfast from 9am.
